To make this cake you will need:

2 boxes of Brownie Mix (or you can triple this homemade brownie recipe)

cookie dough frosting (below)

4 cups chocolate chips (can be milk or semi-sweet chocolate)

1 cup mini chocolate chips

small offset spatula

cake stand

How to make a Brownie Cookie Dough Cake

Begin by preparing brownie mixes according to box directions. (Or making from-scratch brownies.) Place 2 cups of brownie batter into each 8-inch round cake pan, three pans total. (To prepare the pans I generously coated them with GOOP, then placed a parchment circle in the bottom, then added more GOOP.)

Allow brownies to cool then remove from pan.

While the brownie is baking, prepare Cookie Dough Frosting.

Easy Brownie Cookie Dough Cake

Place 1 layer of brownie on the cake stand. Cover with about 1/2 cup of cookie dough frosting using a small offset spatula. Sprinkle 1/2 cup of mini chocolate chips on top. Add the next layer of brownie, cover with 1/2 cup cookie dough frosting, then 1/2 cup mini chocolate chips. Place the final layer of brownie on top and cover the entire cake with the remaining cookie dough frosting.

Now press chocolate chips into the sides and top of the cake. Fill in as much as possible.

Drizzle 1 cup of chocolate syrup (you can also use chocolate ganache) over the entire cake. Chill until ready to serve.

Cookie Dough Frosting

Is there anything better than brownies and chocolate chip cookie covered in decadent chocolate syrup? This (surprisingly easy!) Brownie Cookie Dough Cake is sure to be a show-stopper!

Ingredients

  • 1 ยฝ cups packed light brown sugar
  • 1 cup (2 sticks or 226g) butter, at room temperature
  • 1 ยฝ cups all-purpose flour*
  • 2 teaspoons McCormickยฎ Vanilla Extract
  • 1 cup whole milk

Instructions

  • Beat brown sugar and butter together in a stand mixer (or hand-held mixer) on medium speed until smooth and creamy.
  • Add in flour and vanilla extract into creamed butter until fully combined.
  • With the mixer on low speed, and in milk a little at a time until fully incorporated.
  • For the Brownie Cookie Dough Cake the mini chocolate chips will be added on top of the frosting. You can also add 1 cup of mini chocolate chips directly into the frosting.
  • IF YOU DON'T WANT TO USE FLOUR out of the bag, just place it on a baking sheet in an even layer and bake at 350ยฐF for 10 minutes.ย

  2. This looks AMAZING! I have one question, since the brownie batter is spread out between 3 pans, how long do you bake it? I didn’t see that in the instructions. Thanks!

    1. Follow the directions on the brownie box for bake time & ingredient amounts. Check with a knife or tooth pick a few minutes before the stop time to see if they are done.

    2. I have a convection oven and it was 24 minutes with all 3 pans on middle rack. My boxed brownie mix stated 39-43 for an 8×8 metal pan.

    1. You likely mix and bake the brownies per the instructions on the box. That will usually require eggs, oil, and water.

      1. I really like your recipes, however, I am giving up. There are way too many ads popping in and out all over the place and really screwing with the loading of the page. Then, it is much too hard to find the link to print out the recipe so that one has it in usable form.

  5. No one hated on frosting being raw flour and butter and milk . Cookie dough or not ,doesn’t, sound good!

    1. So I thought the cookie dough icing was a lil plain so I added peanut butter, cream cheese, and powdered sugar and HELLO!! I also switched the chocolate chips for peanut butter chips

      1. The icing recipe is bland and did not taste like chocolate chip cookie dough (CCCD). I added 1/4 cup powdered sugar (as opposed to granulated sugar which is typically part of a CCCD recipe) an extra teaspoon of vanilla and at least an extra teaspoon of salt. I continued to add a little more salt until it had the taste of actual cookie dough.
        Everyone’s taste buds are different and I don’t like to use a lot of salt, but when you’re indulging in a decadent dessert like this, it’s important for it to taste as it’s named and definitely worth it!

      1. Sounds strange to have all that flour instead of icing sugar. I think I will use cream cheese and icing sugar with the butter and a bit of milk.Using flour just sounds strange.

        1. It’s supposed to be cookie dough- hence the flour- changing to cream cheese changes the entire recipe and you can no longer call it cookie dough cake,

        2. Then it no longer is COOKIE DOUGH FROSTING…The whole point is that the frosting tastes like cookie dough – exchanging the flour for powdered sugar I’m sure would taste good – just a completely different recipe. I made the recipe as is and it’s my families new favorite! I’m making it again this week for my daughters birthday – And BTW I’ve made it twice with raw flour – none of us got sick – Some people are paranoid for no reason – The cake is amazing as is! ๐Ÿ™‚

  6. You said to coat the pans with GOOP. In case a very novice baker is using this recipe, there is a hand cleaning product called GOOP. Disastrous results if the products were confused!

      1. I’m sure it’s not. I run a FB page for new cooks. You have NO idea what people take literally these days. I can easily see someone using the hand cleaner GOOP in the pans. I thought the same thing as the poster. I no longer abbreviate anything in that group. New cooks/bakers don’t understand. When in a hurry they take it literally.

        1. I link directly to the GOOP recipe. It is very, very easy to see exactly what it is. If someone is unable to distinguish a cleaning product from a clearly labeled baking product that may fall on them.

        2. Is this the Erin W. U know…. just saying the Goop hand cleaner!! LOL Dern I would hope ppl wouldn’t use that!!
