- ¾ cup (193.5 g) creamy peanut butter
- 1 cup (200 g) granulated sugar
- 2 teaspoons vanilla extract
- 1 pinch kosher salt
- 1 envelope (about 2 ½ teaspoons) unflavored gelatin
- ½ cup boiling water
- ½ cup cold water
- 1 can (12 ounces) evaporated milk, chilled in the freezer for 30 minutes
Instructions
- Place the bowl of a stand mixer, the whisk attachment, and the can of evaporated milk in the freezer for at least 30 minutes. Do not skip this step.
Crust
- Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
- In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until evenly moistened. Reserve ¼ cup of the crumb mixture for the topping.
- Press the remaining crumb mixture firmly into the bottom of the prepared pan. Set aside.
Filling
