Sโmores Bars are a delicious, no-bake treat made with just four ingredients: Golden Grahams cereal, marshmallows, milk chocolate chips, and butter! Each bite gives me all of the flavors of classic S’mores–no campfire required! Itโs perfect for dipping graham crackers and fruit or even just enjoying with a spoonful!

Ingredients & Substitutions
- Cereal: Golden Grahams cereal gives the bars that familiar graham cracker flavor from S’mores, plus a nice crunch!
- Marshmallows: Miniature marshmallows give the bar that chewy texture. Regular marshmallows can work, too. Just cut them into smaller pieces. Or, if feeling ambitious, make homemade marshmallows!
- Chocolate Chips: For the sweetness, I used milk chocolate chips. But, dark chocolate chips would be delicious, I think. Or, try the bars with peanut butter chips, which I think I would love, too!
- Butter: Butter helps melt the marshmallows and binds everything together, making the bars sticky and delicious. I used unsalted butter, but salted butter would be fine, too.

Can You Use A Different Cereal In S’mores Bars?
Yes, you can use different cereals if you don’t have Golden Grahams! You can use Rice Krispies, Cornflakes, or any cereal with a similar texture. Golden Grahams add a unique flavor, but other cereals will still work well.
How To Store S’mores Bars
Store S’mores bars in an airtight container at room temperature for up to 3 days. If you want them to last a little bit longer, keep them in the refrigerator, covered, for up to 5 days or so.

Can You Freeze S’mores Bars?
Yes, you can freeze Sโmores Bars! First, make sure the bars cool completely before freezing so they donโt get soggy. Then, wrap them tightly in plastic wrap or wax paper to keep them fresh. After that, place the wrapped bars in a freezer-safe bag or container to protect them from freezer burn. You can freeze them for up to 3 months. When ready to eat them, just let the bars thaw at room temperature for a few hours or heat them in the microwave for a few seconds to soften them up.

S’mores Bars
Ingredients
- 1 box (11.7 ounces) Golden Grahams cereal, divided
- 2 bags (10 ounces each) miniature marshmallows, divided
- 2 cups (364 g) milk chocolate chips, divided
- 5 tablespoons unsalted butter
Instructions
- Line a 9×13-inch baking dish with parchment paper. Make sure the parchment extends up the sides for easy removal. Then, spray the parchment with baking spray.
- To a small bowl, add ยพ cup Golden Grahams cereal, ยพ cup miniature marshmallows, and ยพ cup chocolate chips. Mix to combine. Set aside to use for the topping.
- In a large saucepan over medium-low heat, melt the butter.
- Add 8 cups of miniature marshmallows to the melted butter. Stir constantly for about 3-4 minutes, until fully melted and smooth. Remove from heat.
- Immediately stir in the remaining Golden Grahams cereal, making sure it is fully coated.
- Quickly fold in the remaining miniature marshmallows and chocolate chips, stirring gently to combine. Avoid overmixing so the chocolate doesnโt melt too much.
- Press the mixture evenly into the prepared baking dish.
- Sprinkle the reserved cereal, marshmallow, and chocolate mixture over the top, pressing it down gently to help it stick.
- Let the bars cool completely in the pan (1-2 hours).
- Once set, lift them out using the parchment paper. Cut and serve.

This was a total disaster. Being a gourmet cook and baker for over 60yyears, have no idea why this was a disaster.It was so difficult to mix the ingredients,marshmallows took forever to melt down with 5tbs butter, then so hard to mix in the cereal and rest of ingredients.They are tasty ,but very hard and crunchy, the cereal squares r what are so hard and crunchy and the topping did not stick at all. .Clean up of saucepan took many soakings..Would appreciate A response as I love all your recipes. Iโm so glad you reached out and Iโm really sorry this one gave you trouble. Thatโs definitely not how it should turn out.
The mixture should come together pretty easily once the butter and marshmallows are fully melted and smooth. If it felt thick or hard to stir, it can be because the marshmallows were cooked a bit too long or over higher heat, which can make the mixture stiff and lead to harder bars once cooled.
For the best results, I recommend melting the butter and marshmallows slowly over low heat, stirring constantly, and removing from heat as soon as itโs smooth. That keeps everything soft and easy to mix, and helps the bars stay chewy instead of crunchy.
