Mousse Brownies Ingredients & Smart Substitutions

Brownies: This go-to brownie recipe is fudgy, moist, and rich. If you prefer, you can use a boxed brownie mix—simply follow the package instructions and let the brownies cool completely before adding the mousse. And be sure you make them in the same pan as I did; I love this one from Amazon that comes in 3 different sizes!

Cornstarch: Adding cornstarch to the brownie recipe helps give the brownies a soft, chewy, and fudgy texture.

Cocoa Powder: Dutch-processed cocoa powder is recommended for a smooth flavor and rich color. Regular unsweetened cocoa powder can be used but may alter the taste and texture slightly. (And will appear lighter in color.)

Yes, you can prepare both the brownies and mousse ahead of time!

  • Brownies: Bake and cool the brownies, then store them in an airtight container at room temperature for up to 2-3 days.
  • Mousse: Prepare the mousse and store it in the refrigerator for up to 2-3 days. Stir before spreading over the brownies.

Note: Making each part in advance might tempt you to enjoy them separately before assembly!

How To Store Strawberry Mousse Brownies

Because of the mousse topping, it’s best to store the strawberry mousse brownies in the refrigerator. Carefully cover the brownies in the pan with plastic wrap. They will last up to 2-3 days.

Can I Freeze These Brownies?

Yes, you can freeze these brownies. Freeze the brownies with the mousse topping for 1-2 hours to set, then wrap for long-term storage. Thaw in the refrigerator overnight to maintain the mousse’s texture.

Instructions

  • Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper up the sides.
  • In a large bowl whisk flour, cornstarch, cocoa, baking powder, and salt. Set aside.
  • To the bowl of a stand mixer fitted with the paddle attachment, add the eggs, sugar, butter, and vanilla. Beat on medium speed until light and fluffy.
  • With the mixer off, add the flour mixture. Turn the mixer on low and mix until the ingredients are well combined.
  • Pour brownie batter into the prepared baking dish and bake for 30-35 minutes, or until done. Fudgy brownies are done baking when the edges appear set, but the center is still shiny, or moist.
  • Let the brownies cool at room temperature.
  • Spoon the mousse over the cooled brownies and spread it into an even layer. Garnish with fresh strawberries
