- 3 cups (300 g) cake flour
- โ cup (133 g) granulated sugar
- 2 tablespoons baking powder
- ยฝ teaspoon kosher salt
- ยฝ teaspoon nutmeg
- ยผ cup (ยฝ stick / 57 g) unsalted butter, room temperature
- ยพ cup (184 g) whole milk, plus 1 teaspoon, room temperature
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
Glaze
- 4 cups (500 g) confectioners' sugar
- 2 teaspoons corn syrup
- ยฝ teaspoon vanilla extract
- ยผ teaspoon kosher salt
- ยฝ cup (122.5 g) whole milk, room temperature
Instructions
- Preheat the oven to 400ยฐF. Line 2 large baking sheets with parchment paper.
- In the bowl of a stand mixer with the paddle attachment, combine flour, sugar, baking powder, salt, and nutmeg. Add butter and mix until it becomes a sand-like consistency.
- In a separate bowl, combine milk, egg, and vanilla.
- Slowly add the wet mixture to the flour mixture, mixing on low until a soft dough forms.
- Fold the dough out onto a lightly floured surface, sprinkling flour on top of the dough.
- Shape the dough into a circle, rolling it out to about โ -inch thick. Using a pizza cutter or a sharp knife, cut the dough into wedges, sprinkling more flour as needed (if the dough is too sticky).
- Carefully place the wedges onto the lined baking sheets, leaving 1-2 inches between each wedge.
- Bake 10-12 minutes, rotating the pans halfway through baking time, until golden brown.
Glaze
- In a medium bowl, combine sugar, syrup, vanilla, salt, and milk. Whisk together until smooth, adding more milk (if necessary) to reach your desired consistency.
- After the sconuts have cooled slightly, pour the glaze over them until completely covered. Serve immediately.

Can you use all purpose. Flour. If that is all I have & donโt wonโt to go buy cake flour & might not use it again
You can make your own cake flour… Measure 1 level cup of all-purpose flour, remove 2 tablespoons of the flour and add 2 tablespoons of cornstarch to the all-purpose flour. Whisk together to combine and use as a substitute for 1 cup cake flour. ๐ Good luck!!!

Made this a few minutes ago- I weighed out my ingredients (making no substitutions) and the dough was very soft. More like a muffin batter. I added another 1/4 cup after mixing it up and scraped it onto a floured piece of parchment and generously floured the top to pat it out to a round. There was no way I was going to be able to cut it into eight and have it slide apart into separate pieces so I just scored it (the dough stuck to my bench scraper) and baked it then cut apart after baking. I halved the glaze and still had leftovers. They taste like a biscuit to me.
I think the flour ratio is off and you might consider halving the glaze! Just a heads up if anyone else makes them and the dough is too soft to cut apart- just bake in one large round and cut after!
Hi Laura! Did you use cake flour? It’s almost impossible to get a wet batter based on the amounts of the ingredients. 3 cups cake flour vs. just over a cup of the liquid total in the sconuts. It is definitely on the dryer side. However, I will remake and review the glaze amounts, as we used it to pour over the sconuts to coat completely, maybe others won’t do that.

When I just made it I weighed the milk and it only came to 1/2 cup liquid. So I made it the 3/4 c shown on recipe. Way too soft. So I think it should have said 1/2 cup milk

I put all the ingredients in My Fitness Pal Recipe Creator and I believe you have it wrong. It matched all the same ingredients and here are the results:

Hi Sans – I double checked the numbers, had someone else double check, and then another person run the numbers just to see what results we would get. It was the same every time. To be quite honest, My Fitness Pal is very nitpicky and will often auto-populate totals and change your amounts, so I can see how you could have made an error in your calculations. Rest assured, the calculations in the post are correct.
