Brown Sugar Oat Milk Espresso Shaker {Starbucks Copycat}
I love Starbucks coffee and all of their choices, but I don’t love the long lines. So, I decided to replicate one of their newer drinks, the Brown Sugar Oat Milk Espresso Shaker iced drink. It has just enough sweetness from the brown sugar simple syrup. And, the drink is topped off with plant-based oat milk.
Brown Sugar Oat Milk Espresso Shaker Ingredients
Brown Sugar Simple Syrup: Use light or dark brown sugar to make the simple syrup that will be added to this espresso shaker drink.
Cinnamon: Just a half teaspoon of cinnamon is all you need to help flavor this drink. Plus, cinnamon is a spice that is full of health benefits!
Espresso: To truly copy the Starbucks recipe, I used blonde espresso, which is less bitter than regular espresso. Espresso is a concentrated form of coffee. Itโs made with finely-ground coffee beans and an espresso machine that blasts boiling water through the ground coffee. It is served in shots (about 1 ounce per shot).
Espresso can be made with any kind of coffee, from light roast to dark roast. You can also buy espresso ground coffee and even espresso K-cups you can make in a Keurig coffee maker. If using regular coffee, the coffee flavor will be less intense. You could also use cold brew in this recipe.
Oat Milk:ย Oat Milk joins other popular plant-based milk like soy, almond, and rice milk. It has a creamy texture and is made by blending water and oats, then straining the liquid. Store-bought oat milk has about the same amounts of vitamins and minerals when compared with cow’s milk.ย
No Shaker? No Problem!
If you don’t have a shaker, simply use a to-go coffee mug with a solid lid. Fill the mug up with ice, just like in a shaker, add all the ingredients, cover the opening mouth part, and get shakinโ! When you are ready to pour the contents into the glass, just open up the mouth opening and pour. The lid should hold the ice back so you just get the chilled beverage.
How Does an Iced Brown Sugar Oat Milk Espresso Taste?
Everyone I made this drink for loved it. Really! Some of them are die-hard coffee drinkers, some not so much, but everyone took a sip and said they would definitely make this at home. It’s smooth, creamy, has just the right amount of sweetness, and has the perfect coffee kick. Definitely worth trying!
How to Store Brown Sugar Simple Syrup
After the syrup has cooled, store it in an air-tight container, in the refrigerator, for up to a month.

Ingredients
Brown Sugar Simple Syrup
- 1 cup (237 g) water
- 1 cup (200 g) brown sugar, packed
Drink
- 1-2 tablespoons brown sugar simple syrup, depending on how sweet you like it
- ยฝ teaspoon cinnamon
- 3 shots blonde espresso *see notes
- ยผ cup (60 g) oat milk
Instructions
Brown Sugar Simple Syrup
- In a small saucepan over medium heat, heat water to just below boiling.
- Add brown sugar. Whisk together, continuing to heat, until all sugar crystals have dissolved. Remove from heat to cool.
Drink
- In a large shaker filled with ice, add brown sugar simple syrup, cinnamon, and blonde espresso. Shake until well mixed.
- Pour over ice. Top with oat milk. Serve cold.

This is great. But I canโt help but think about paying almost $6 for this drink at Starbucks when you can order a Triple Iced Espresso with all the ingredients (brown sugar syrup, cinnamon powder, extra splash of oat milk) and that would cost less than $4 and thatโs WITH the 50 cent charge for the brown sugar syrup (oat milk is free when ordered as a splash even though itโs given as more than just a โsplashโ). So my advice is order it that way, save over $2 and just shake it yourself!

I was so mad at starbucks when u began realizing a 16 oz grande or 24 oz venti is WITH ICE. I will not spend $6 or $7 for these iced drinks. So I started omg making my own. I did this for their eggnog lattes and regular lattes. Your “copy” recipe is pretty good but too much cinnamon!
This was a great recipe! I used what I had on hand and it still turned out great. I was able to substitute Swerve brown sugar and used almond milk and the nespresso chiaro.

No, dear. You need to use actual cinnamon sticks in the making of your syrup. Ground cinnamon does not dissolve, it does not give you a smooth enough beverage.

I can’t wait to try this!!! After reading the comments, I might try it the way the recipe is written and also using cinnamon sticks with the brown sugar when making the simple syrup. That means I get 2 drinks. Not a bad deal.
Also, try this drink as a Latte. SO GOOD!
