Strawberry Iced Oatmeal Cookies Ingredients & Substitutions

  • Oats: I prefer using rolled oats (old-fashioned oats) for the cookies. We tested the cookies with both rolled oats and quick oats. While everyone preferred the texture of rolled oats, quick oats also work, but will give the cookies a bit of a different texture. You will love them either way you bake them!
  • Spices: I stuck with the traditional flavors of an oatmeal cookie by adding cinnamon and nutmeg.
  • Brown Sugar: Using only light brown sugar (no granulated sugar) in the cookies gives them a softer, chewier texture, which I love!
  • Molasses: Besides adding flavor to the cookies, I like the color the molasses adds to them.
  • Strawberry Glaze: We tested a couple of strawberry glazes and liked the one we went with for this recipe the best. It is easy to make and can be made using fresh or frozen strawberries!

Can I Make Oatmeal Cookies Ahead of Time?

Yes! Oatmeal cookie dough freezes well for up to 2 months, allowing you to enjoy freshly baked cookies anytime. First, scoop out individual balls of dough and place them onto a parchment paper-lined baking sheet. Freeze the dough balls for an hour or two, or until solid. Once frozen, transfer them to a freezer-safe zipper bag. When you’re ready to bake, simply bake the cookies from frozen, adding one or two minutes to the baking time. After they have cooled, add the glaze!

Top Mix-Ins For Strawberry Iced Oatmeal Cookies

I assure you, these cookies are amazing as-is, but it’s always a fun (and tasty) experiment to try some mix-ins! Here are a few options you could try:

  • White chocolate chips
  • Chocolate chips
  • Chopped nuts like walnuts, pecans, or almonds
  • Raisins
  • Coconut flakes
  • Dark chocolate chunks

How To Store Strawberry Iced Oatmeal Cookies

To store the iced oatmeal cookies, first, let the glaze set after drizzling it over the cooled cookies. Then, keep them in an airtight container at room temperature for up to 3-4 days. If stacking the cookies, place a sheet of parchment or wax paper in between layers to keep them from sticking together. For longer storage, freeze the cookies for up to 3 months. Strawberry Iced Oatmeal Cookies are my classic oatmeal cookies, which are delicious on their own, with a strawberry glaze that adds a fresh, fruity twist. The strawberry flavor in each bite really makes this cookie a unique and irresistible treat!

Ingredients

Oatmeal Cookies

  • 2 cups (180 g) rolled oats
  • 1 ยฝ cups (187.5 g) all-purpose flour
  • ยฝ teaspoon baking powder
  • ยฝ teaspoon baking soda
  • ยฝ teaspoon kosher salt
  • ยฝ teaspoon cinnamon
  • ยผ teaspoon nutmeg
  • ยฝ cup (1 stick / 113 g) unsalted butter, room temperature
  • 1 cup (200 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tablespoon molasses
  • 1 teaspoon vanilla extract

Strawberry Glaze

  • ยฝ cup strawberries, fresh or frozen
  • 1 cup (125 g) confectioners' sugar
  • 1 tablespoon heavy cream

Instructions

Oatmeal Cookies

  • Preheat oven to 400ยฐF. Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together rolled oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • To the bowl of a stand mixer with the paddle attachment, add butter and brown sugar. Beat on low speed until smooth.
  • Add eggs, molasses, and vanilla. Mix until all ingredients are fully incorporated, stopping to scrape down the sides of the bowl as needed.
  • With the mixer still on low speed, slowly add the dry ingredients until fully incorporated.
  • Using a 2-tablespoon scoop, drop the dough onto the lined baking sheet. Gently press to flatten the cookies slightly.
  • Bake for 7-8 minutes. They may look slightly doughy, and that is okay.
  • Let the cookies rest on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Strawberry Glaze

  • To a food processor, add strawberries, confectioners' sugar, and heavy cream. Blend until smooth.
  • Once the cookies have cooled completely, drip or drizzle the strawberry glaze over the tops.
  • Allow glaze to set before serving.
