Putting together a vibrant and delicious salad doesnโt have to consist of dozens of ingredients! This easy Grilled Chicken Tomato Salad comes together in just minutes and makes you feel like you are eating a decadent and filling dish! This salad goes perfectly with my Homemade Ranch Dressing!
Grilled Chicken Tomato Salad
By incorporating quality over quantity you can create a mouth-watering salad! The hardest part of this salad? Making the chicken. And even that is easy!
Why is this Grilled Chicken Salad Special?
This salad holds a special place in my heart for one big reasonโฆ it was the first salad I was able to make with ingredients entirely from our homestead! We raised the chickens from eggs, butchered and processed them ourselves, we grew the gorgeous cherry tomatoes, onion, and lettuce in our garden. There are even a few โweedsโ in there! (There are many edible weeds on the property and I love to incorporate them into salads and smoothies.)

I am almost embarrassed at how proud I am of this simple salad. It is such a gift to share this “garden to plate” experience with my kids!
Grilled Chicken Tomato Salad
Ingredients
- 4 (6-ounce) skinless, boneless chicken breast halves
- ยผ teaspoon kosher salt
- ยผ teaspoon black pepper
- Cooking spray
- 5 cups lettuce (any mix will do)
- 2 cups halved multicolored cherry tomatoes
- ยผ cup finely chopped red onion
- 12 large hard-boiled eggs, halved
Instructions
- Heat a large grill pan over medium heat. Sprinkle chicken with salt and pepper. Coat pan with cooking spray. Place chicken in pan; cook 5-6 minutes on each side or until done.
- While chicken cooks lay lettuce in the bottom of a large dish. Place tomatoes around one edge and the halved eggs along the other. Nestle the chopped onion near the eggs.
- When your chicken is done cooking and slightly cooled, slice it. Set the sliced chicken in the center of your eggs and tomatoes.
- Serve with dressing of your choice.
- After dressing has been added, feel free to toss the salad ingredients together. We often don't do this as the kids each like a different dressing. ๐
