If you are looking for a treat for a special morning, or anytime you want to wake up to a comforting, indulgent breakfast, this Berries and Cream Overnight French Toast Bake is the perfect choice! Made with brioche, a sweet cinnamon-egg custard, juicy berries, a buttery crumble topping, and finished with a drizzle of cream cheese glaze, this will surely impress you and your guests! Ingredients & Substitutions
- Bread: For most of my French toast bakes, I use Brioche bread. It is sturdy enough to absorb the custard mixture, and it tastes wonderfully rich and buttery! Challah bread would also be delicious!
- Custard Mixture: The custard mixture is a sweet and creamy blend made with eggs, milk, heavy whipping cream, brown sugar, vanilla, cinnamon, and salt. It soaks into the bread, making it soft and flavorful.
- Berries: The berries in this recipe, like strawberries, raspberries, and blueberries (which are what I used), add a burst of sweetness and a bit of tartness to balance the rich custard. You can also use other types of berries, like blackberries, or a mix of your favorites! Frozen berries work great too, so you can use whatever you have available.
- Crumble Topping: The crumble topping is made by mixing flour, brown sugar, cinnamon, and a pinch of salt. Then, small cubes of butter are added and mixed in until it looks crumbly. (I use my hands to mix the topping.) When baked, it creates a sweet and buttery crunch on top of the French toast bake. Do not mix the topping together until ready to bake the French toast bake.
- Glaze: The glaze is a smooth and creamy mixture made with softened cream cheese, butter, confectioners’ sugar (also called powdered sugar), and a little milk. Itโs drizzled over the top of the French toast bake. I love how it adds a finishing touch and sweetness to each bite. But, you could leave it off if preferred. The French toast bake will still be delicious!

Can I Use Frozen Berries?
Yes, you can use frozen berries in the French toast bake. They work just as well! Simply add them straight from the freezer. If you are worried that frozen berries will add too much liquid, you can pat them dry with a paper towel before adding them to the French toast bake. This will help reduce extra moisture and keep your dish from getting too soggy.

Yes, this Berries and Cream French Toast Bake is made ahead of time, and it’s perfect for prepping the night before. Simply assemble the casserole, cover it, and refrigerate overnight. How To Store & Reheat Berries and Cream Overnight French Toast Bake
To store leftover Berries and Cream French Toast Bake, cover it tightly with plastic wrap or aluminum foil. Keep it in the refrigerator for up to 3 days. To reheat, warm it in the oven at 350ยฐF for about 10-15 minutes, or microwave individual servings until heated through. You can also freeze it for up to 2 monthsโjust make sure to let it cool completely before freezing!

Berries and Cream Overnight French Toast Bake
Ingredients
- 1 loaf (16 ounces) Brioche bread, cubed
- 8 large eggs, room temperature, beaten
- 2 cups (490 g) whole milk, room temperature
- ยฝ cup (119 g) heavy whipping cream, room temperature
- ยพ cup (150 g) light brown sugar, packed
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- ยฝ teaspoon kosher salt
- 2 cups mixed berries, fresh or frozen (we used chopped strawberries, raspberries, and blueberries)
Topping
- ยฝ cup (62.5 g) all-purpose flour
- ยฝ cup (100 g) light brown sugar, packed
- 1 teaspoon ground cinnamon
- ยผ teaspoon kosher salt
- ยฝ cup (1 stick / 113 g) unsalted butter, cut into small cubes
Glaze
- 4 ounces (ยฝ package) cream cheese, softened
- 2 tablespoons unsalted butter, softened
- โ cup (83 g) confectioners' sugar
- 2 tablespoons whole milk, or more as needed for desired consistency
Instructions
- Spray a 9ร13-inch baking dish with nonstick cooking spray.
- Add the bread cubes to the dish in an even layer. Set aside.
- In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, vanilla, cinnamon, and salt until smooth and fully combined.
- Pour the egg mixture evenly over the bread cubes, gently pressing down to ensure all of the bread gets soaked.
- Sprinkle the mixed berries over the top of the casserole. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or up to overnight.
Crumble topping
- When ready to bake, preheat oven to 350ยฐF (175ยฐC).
- In a medium bowl, whisk together the flour, brown sugar, cinnamon, and kosher salt. Then, add cubed butter. Using your hands, work the butter through the flour mixture with your fingers until crumbly and well combined.
- Remove the casserole from the refrigerator. Sprinkle the crumble topping evenly over the soaked bread cubes.
- Bake the casserole, uncovered, for 55-60 minutes, or until the top is golden brown and the center is set.
Glaze
- While the casserole bakes, prepare the glaze. In a medium bowl, mix together the cream cheese and butter until smooth. Stir in the confectioners' sugar and milk, adding more milk as needed to achieve a smooth, pourable consistency.
- Let the casserole rest for 10 minutes.
- Drizzle with the cream cheese glaze and serve warm.
