Back to dessert pizza. ย One of the best things about this is the shortbread cookie crumble on top of the pizza. ย I asked my sweet Parker if he would help out and he was happy to lend a hand.

So this is a layer of cinnamon and sugar pizza, a cream cheese layer, a blueberry pie filling layer, then shortbread crumbles.

Blueberry Dessert Pizza

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 2 tablespoons butter, melted
  • ยผ teaspoon cinnamon
  • 1 12-inch thin pizza crust, pre-made
  • 8 ounces cream cheese, softened
  • ยฝ cup butter softened
  • 1 teaspoon vanilla
  • ยพ cup confectioners sugar
  • 21 ounces can blueberry pie filling
  • 1 cup crushed shortbread cookies

Instructions

  • Heat oven to 350ยฐF.
  • Mix 2 tablespoons of melted butter with cinnamon and brush over the entire pizza crust.
  • Bake crust for 5 minutes or until crust is golden brown, then allow the crust to cool.
  • In a stand mixer, blend together cream cheese, softened butter and vanilla until light and fluffy.
  • Add confectioners sugar and mix well.
  • Carefully spread cream cheese mixture evenly over pizza crust.
  • Add an even layer of blueberry filling.
  • Generously sprinkle the top of the pizza with crushed shortbread cookies. (I use Walkers and used 6 roundย cookies.)

  1. Question about the pizza dough. Can you use canned thin crust pizza dough, and isn’t using pizza dough going to make this a little more ‘chewy’ Typically, a sugar cookie bottom is used in fruit pizzas. Remarks ?

  3. Hi, if you have never tried this pizza dough recipe please give it a try. You can make it thick or thin. Shot Gun Red, YouTube, two ingredients. I’ve eaten a lot pizza in my life, this dough is the best. RIP, Red. Sorry I used it to make your recipe, delicious.
