    Did you know I bake lots of cakes?  Like, lots and lots of lots of cakes?  I had a homemade white cake recipe that I love but have been on the search for a good (and it must be GOOD) yellow cake recipe. This Yellow Cake Mix is the perfect way to get rid of box mixes or the perfect gift for a friend!

    There are TWO reasons that I finally ended up in this yellow cake recipe:

    #1 Its a one-bowl recipe.


    #2 It uses whole eggs, not 8 egg yolks.

    Oh, and one more… it’s the BEST! Tastes amazing.

    The recipe is written to be stored. You prepare the dry ingredients, label, and store it in your pantry. When you are ready to bake the yellow cake, you remove from your pantry and add the wet ingredients. It is a great option if you have a few extra minutes the week before a birthday or special occasion! Not only can making your own cake mixes save you time, but they taste amazing and are real, natural ingredients!

    Homemade Yellow Cake Mix

    I couldn’t help but pair this yellow cake with a rich chocolate buttercream, as that is my favorite combination.

    If you want to give this as a gift simply print out the ‘wet’ ingredients and the directions and attach to the jar.  Be sure to add some instructions, though.  Something like, “After the cake is cooled call me and I will be right over.”

        • 2 1/4 c all-purpose flour
        • 1 1/2 c granulated sugar
        • 3 1/2 tsp. baking powder
        • 1 tsp. salt
        • 1 1/4 c milk
        • 1/8 c vegetable oil
        • 1 stick butter, softened
        • 1 tbsp. vanilla extract
        • 3 large eggs


        1. Measure flour into quart size mason jar.
        2. Add sugar on top, then baking powder, then salt. Place lid on jar. (My ingredients JUST fit)

        When Ready to Prepare Cake Batter

        1. Place softened butter into stand mixer and mix on medium for 1-2 minutes.
        2. Place dry ingredients into stand mixer and combine with butter for 30 seconds.
        3. Add milk, oil, vanilla and eggs and mix on medium-high for one minute.
        4. Pour batter into prepare pans. Bake at 350. For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes. Cool before frosting.

        I have tried this one and the white cake recipe and both come out tasting either like pancakes or cornbread. What am i doing wrong?

          The Yellow Cake AND White Cake both taste like pancakes or corn bread? Gosh, that is odd! So sorry you have had issues. I am not sure how to specifically troubleshoot the issues, but am happy to next time you make it. IF you make either again!

          I did it last night and happened the same to me 🙁 anyone know how to make it taste like cake sweet ? I dont know what went wrong


            I think u will need to sieve the flour if its the all purpose flour, 3 times or more depending on how much spongy u want your cake to be. 🙂

        I was wondering if you could make this in a square or rectangle pan.

        The bake time is already at 25 minutes and the cake looks still batter in the centre. Has anyone else had this problem.

        So I used this recipe for my first time ever attempting to make homemade cupcakes.and let me say they are amazing! I will never buy a boxed cake again! My only issue is the cupcakes are a little on the dense side so I may use cake flour next time and see if I can get that light and fluffy texture.i also didn’t use a stand mixer I did it by hand since my bit the dust a few weeks ago.but over all amazing recipe!!

        I’ve made this twice now as cupcakes and it is the PERFECT recipe. I followed the ingredients exactly and the taste and the texture of the cake is wonderful. This has now been added to my baking cookbook. Thank you for sharing.

        Wanted to know how many cupcakes this recipe will make. If iI wanted 24, do I need to double it?

        I made this mix for cupcakes for my son’s bday party tomorrow, but I used fresh milled flour and the cupcakes fell in the middle instead of rising. I don’t know what went wrong. Has anyone else used fresh flour? I used soft white wheat berries.

        Can you give me this recipe in gluten free? Would it be the same if Gluten Free All Purpose Baking Mix was used instead of wheat flour?

          Hi Karen,
          I often substitute gluten-free baking flour mix for standard flour so a co-worker isn’t left out when I bring in treats. As long as you use the gluten free baking mixes that have xanthan mixed it in usually comes out fine.

        Anybody know what adjustments are needed for an altitude of 7,000 feet?

        How long does this mix last? Shelf life? Thanks

          I would say 3 months on the safe side, but you will want to condier the life of your ingrediens. So if your baking powder expires in 2 months, then 2 months. Hope that helps!

        My mother always made a chocolate peanut butter frosting for her homemade chocolate cakes . Would you have any idea how much peanut butter you should add to your chocolate recipe for this type of icing ? She would make six thin layers and it was the most delicious cake I can remember eating . But I never got her recipe

        i used this recipe for the first time today. i followed the directions exactly but when i pulled it out of the oven it looked a little strange. it looked like cornbread. i hoped it would at least taste like cake so i let it cool down. but… NOPE! still cornbread.

        I am in Australia…how much is a stick of butter in grams please.

          I know it’s a 1/2 cup. I think she posted in the above comments that is 113g. 🙂

        Tonight, I had a sweet tooth and decided to bake a homemade cake. I used this recipe and, Wow! it turned out wonderful. My children loved it. Just so you know, this is a big deal. In the past, every homemade cake I’ve ever made went into the garbage. For years, I had sworn off homemade cakes and settled for boxed cake mixes. Today, I used this recipe to bake two cakes. We ate one before it was able to cool down completely. Thanks for this recipe. I’m grateful. And get this, my husband even enjoyed the cake. He’s a blunt man when asked if he likes a certain baked good. He even complimented me. I will be using this recipe again.

        Can I hug you? I just wanted to make a cake for my boyfriend’s 35th birthday.. Poor guy never had a homemade scratch cake before! I needed simple & not complicated cause well that’s him 🙂
        Can I ask how many round cake pans this will use? I would like to make a 3 teared cake (spell check) & will be adding crushed peanut butter m & ms.. Could not find a simple m & ms cake.. His only request was peanut butter m & ms lol

          Hi! You can use 3 8-inch round cake pans, but your layers will be a bit thin. M&M’s will sink in your cake, so I would make sure you either coat them in flour before adding to batter OR consider using mini M&M’s in the FROSTING! 🙂
