Onion Bacon Jam
Ingredients
- 1 pound thick-cut bacon, diced
- 2 large yellow onions, finely chopped (about 3 cups)
- 2 large (or 6 small) shallots, diced (about 1 ยฝ cups)
- 2 teaspoons garlic, minced
- ยฝ cup (100 g) light brown sugar, packed
- ยผ cup (85 g) maple syrup
- โ cup (79 g) apple cider vinegar
- 1 teaspoon chili powder, optional, but highly recommended
Instructions
- In a medium skillet over medium heat, cook bacon until crispy. While the bacon is cooking, line a plate with a paper towel.
- Place the cooked bacon onto the lined plate. Set aside.
- Leave about 4 tablespoons of bacon grease in the pan, carefully removing the rest.
- To the pan, add the onion and diced shallots. Reduce the heat to medium-low. Cook until the onions and shallots are caramelized, 15-20 minutes, stirring often.
- Mix in the garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, and pieces of cooked bacon.
- Simmer for 7-10 minutes, or until the mixture has thickened. It should be about the consistency of a jam.
- Serve warm or cold, but you may want to warm slightly if it has been refrigerated.

I just made this and it’s phenomenal! We are grilling burgers for dinner and will top them with this delicious jam and cheese.
The ONLY change in ingredients I made was I sub’d regular onions for the shallots because I didn’t have any shallots on hand. I just made sure the total was 4.5 cups. And honestly I think I had close to 5 cups of onions. This made 3, cute, little 1/2 pint jars.
I love this jam!! I recently cooked sone fresh mustard greens and I normally put in some type of smoked pork to season them, but I was out. SoโฆI threw in a couple of heaping spoons full and it was delicious!! It added a little spice and sweetness. Thanks for the recipe!
Made it exactly as recipe called for – DELICIOUS. Then had to figure our how to make with less fat. Tried with half turkey bacon 1/2 regular. Substituted half of the bacon grease for Olive oil .. still yummy and delicious. Third time used only turkey bacon and olive oil. Because the ratio of the other ingredients are tasty, the result was still amazing!!! Such a versatile recipe … we love it. Already shared the jam and recipe with friends! By the way, your cookbook notes are spot on. Had a taste and kept going back for more!!! Dangerously a keeper recipe. Excited to try more recipes in your cookbook.
