  • Creamy finish: Stir in a splash of cream, half-and-half, or coconut milk just before serving.

  • Dessert vibes: Add a dollop of whipped cream or a few mini chocolate chips for a pumpkin pie meets oatmeal experience.

Ingredients

  • 1 ½ cups water
  • 1 cup (90 g) old-fashioned oats
  • ¼ teaspoon kosher salt
  • ½ cup (122.5 g) pure pumpkin
  • ¼ cup (50 g) light brown sugar, packed
  • 1 teaspoon pumpkin pie spice
  • ½ cup whole milk, warmed (100°F-110°F)
  • 1 tablespoon unsalted butter
  • ½ teaspoon vanilla extract

Optional Toppings

  • Toasted pecans
  • Maple Syrup
  • Whole Milk
  • Cinnamon

Instructions

  • In a medium heavy-bottomed saucepan over high heat, bring the water to a full boil.
  • Stir in the oats and salt. Reduce heat to low and simmer uncovered, stirring every 30–60 seconds, for 3–5 minutes, or until the oats are tender and most of the water is absorbed.
  • Stir in the pumpkin, brown sugar, and pumpkin pie spice. Cook 2–3 more minutes, stirring gently, until well combined and slightly thickened.
  • Add the warm milk, butter, and vanilla. Cook for 1–2 minutes more, just until creamy and blended.
  • Remove from heat and cover. Let sit 4-5 minutes to thicken.
  • Spoon into bowls and top with pecans, maple syrup, a splash of milk, or a pinch of cinnamon.
