If you have been to Chattanooga, Tennessee, you may have stopped by Aretha Frankenstein’s. It is a popular diner that is temporarily closed at the moment, but you can still enjoy their famous waffles! Folks rave! The waffles were nice and buttery.
Waffles of Insane Greatness Ingredients
Flour: I used all-purpose flour in this recipe; we have not tested other kinds of flour, so I can’t say how they would each affect the recipe.
Cornstarch: Cornstarch mixed with flour will give you a crispy on the outside, soft on the inside waffle.
Leavening Agents: Both baking powder and baking soda are used in this recipe, which yields soft and fluffy waffles.
Liquid: You can use whole milk or buttermilk in this recipe; I prefer buttermilk. As for the oil, I went with vegetable oil.
How to Freeze Homemade Waffles
If you want to double or triple the batter to make the Waffles of Insane Greatness, they are easy to freeze. After the waffles are cooked, set them on a cooling rack (not directly on a plate) to cool completely. Once cooled completely, lay the waffles on a baking sheet and place them in the freezer to freeze (about 2 hours). After the waffles have frozen, store them in freezer-safe containers, separated by parchment paper, for up to three months.
When ready to enjoy the frozen waffles, pop them in a toaster oven to warm them up. You can also bake them in the oven for about 5 minutes at 425ยฐF. Baking times may need to be adjusted depending on the thickness of your waffles.

Waffles of Insane Greatness
Ingredients
- ยพ cup (94 g) all-purpose flour
- ยผ cup (32 g) cornstarch
- ยฝ teaspoon kosher salt
- ยฝ teaspoon baking powder
- ยผ teaspoon baking soda
- 1 cup (245 g) buttermilk, room temperature
- โ cup (73 g) vegetable oil
- 1 large egg, room temperature
- 1ยฝ teaspoons sugar
- ยพ teaspoon vanilla extract
- confectioners' sugar, for dusting
- butter and syrup, for serving
Instructions
- In a large mixing bowl, whisk together flour, cornstarch, salt, baking powder, and baking soda.
- In a separate bowl combine buttermilk, oil, egg, sugar, and vanilla. Mix well and then pour into the dry mixture, stirring well to combine.
- Let the batter rest for 30 minutes.
- When ready, preheat the waffle iron. Pour batter onto heated waffle iron and heat according to machine directions. Waffles are done when they are crispy on the edges and golden brown.
- Dust with confectioners' sugar. Serve with butter and maple syrup.

This happens to be my go-to waffle recipe. I got it from Rachel Ray maybe ten years ago. Sometimes I substitute 1/4 of the all-purpose flour with whole wheat flour, which gives it a bit more flavor.
Van you use sugar substitute? I cant have sugar. I am pre diabetic.

Instead of sugar add bananas,
blueberries, sautรฉed apples with butter and cinnamonโฆ.. The sugar doesnโt affect the recipe. But for you, this still needs to be taken into consideration because of your pre diabetes.

When making waffles of insane greatness. What is the brand of waffle iron you used. Iโm having a hard time with the reviews saying they arenโt cooking evenly. As a kid waffle irons all performed pretty good. My childhood iron is long gone๐

Just made these and loved them!!! To me, they were more of a waffle crossed with a pancake. My son preferred the thicker/dryer waffles we usually make that came with our Cuisinart Waffle Maker. I thought these had more flavor though and had a nice crunch to them. These were a bit flatter but I still prefer this recipe to others!
