Onion Bacon Jam
Ingredients
- 1 pound thick-cut bacon, diced
- 2 large yellow onions, finely chopped (about 3 cups)
- 2 large (or 6 small) shallots, diced (about 1 ยฝ cups)
- 2 teaspoons garlic, minced
- ยฝ cup (100 g) light brown sugar, packed
- ยผ cup (85 g) maple syrup
- โ cup (79 g) apple cider vinegar
- 1 teaspoon chili powder, optional, but highly recommended
Instructions
- In a medium skillet over medium heat, cook bacon until crispy. While the bacon is cooking, line a plate with a paper towel.
- Place the cooked bacon onto the lined plate. Set aside.
- Leave about 4 tablespoons of bacon grease in the pan, carefully removing the rest.
- To the pan, add the onion and diced shallots. Reduce the heat to medium-low. Cook until the onions and shallots are caramelized, 15-20 minutes, stirring often.
- Mix in the garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, and pieces of cooked bacon.
- Simmer for 7-10 minutes, or until the mixture has thickened. It should be about the consistency of a jam.
- Serve warm or cold, but you may want to warm slightly if it has been refrigerated.

So has anybody tried canning this onion bacon jam? So Elizabeth is there any reason it can’t be canned. Also how long will it last in the freezer? As we like to use what’s in our garden in the summer. Then enjoy it all winter long.

Hi I plan on making the Bacon Onion Jam and have one question regarding an ingredient. The shallot, is that a French shallot; oval shape with brown skin? Some people call green onions shallots. I have a feeling it is the French shallot but wanted to make sure.

It is the oval shallot, however ours tend to have a purple tone to them. :0
