  • Crust: This dessert starts with a graham cracker crust. Ensure the crumbs are completely coated in melted butter to keep the crust together. I think a shortbread crust would be delicious, too!

Pre-Crushed vs Crushing Yourself

The quality of store-bought graham cracker crumbs has changed in the last few years and they seem to be less flavorful and have a different texture. When possible, I recommend the full sheets of honey-flavored graham crackers and crushing them yourself or utilizing a food processor.

  • Cream Cheese: Ensure the blocks of cream cheese are at room temperature before starting the dessert. This can take 30 minutes up to an hour.

How To Soften Cream Cheese Quickly

If you forgot to take out the cream cheese for this recipe, here are a couple of options to get it to room temperature quickly:

Warm Water Method: Place the wrapped block of cream cheese in a bowl of warm water for about 10-15 minutes. Flip it over every few minutes or so.

Microwave Method: Remove the cream cheese from its packaging and place it on a microwave-safe plate. Microwave it on low power in 15-20-second intervals until it reaches the desired softness. Be careful not to overheat it, as cream cheese can quickly become too runny or even melt.

  • Whipped Topping: You can use store-bought whipped topping, thawed, or homemade whipped cream.
  • Jello Mix: Look for a 3-ounce box of peach gelatin mix (peach jello mix). You will use 1/4 cup of the dry mix, leaving you with some remaining that you will not use.
  • Peaches: Drain a can of sliced peaches before dicing them. Some will go into the cream cheese mixture with the remaining reserved for the topping.

Can I Use Fresh or Frozen Peaches Instead Of Canned?

Yes, you could use fresh or frozen peaches in peach delight. If using fresh peaches, peel, slice, and dice them before adding them to the dessert. If using frozen peaches, dice them while they are still a bit frozen. Then, let them thaw and drain them before using.

Can I Use A Different-Sized Pan For Peach Delight?

Sure! I used an 8×8-inch baking dish, but a 9×9-inch dish would work as well. If you squeeze the layers into a 7×7-inch pan, it will be very thick, but can be done. I do not recommend a 9×13-inch baking dish; the dessert will be too thin.

How To Store Peach Delight

I don’t think this dessert will last long once you taste how ‘delightful’ it is! But, it can be stored in the refrigerator, covered, for up to a few days. If possible, wait to add the reserved peaches until just before serving.

Ingredients

Crust

  • 2 blocks (8 ounces each) cream cheese, room temperature
  • 1 cup (125 g) confectioners' sugar
  • 2 teaspoons vanilla extract
  • 3 cups (180 g) whipped topping, divided
  • 1 box (3 ounces) peach jello mix
  • 1 can (15 ounces) sliced peaches in fruit juice, drained, diced, divided

Instructions

Crust

  • Line an 8×8-inch baking dish with parchment paper, including up the sides of the dish.
  • To a medium bowl, add graham crackers and sugar. Mix to combine.
  • Add melted butter to the graham crackers and sugar. Mix until all ingredients are fully incorporated with no dry spots.
  • Press the crumbs firmly into the bottom of the lined baking dish.

Toppings

  • In a large bowl beat the cream cheese, confectioners' sugar, and vanilla with a hand mixer on medium speed until creamy and no lumps remain.
  • With a spatula, fold in 2 cups of whipped topping.
  • Divide the cream cheese mixture into two bowls. Add ¼ cup of the peach jello mix to one of the bowls and gently fold it together. (You will have some jello mix leftover that can be discarded).
  • To the same bowl the jello mix was added, fold in 1 cup of diced peaches. Reserve the remaining peaches to use for garnish.
  • Top the crust with an even layer of the peach mixture, followed by the cream cheese mixture, and finally the remaining 1 cup of whipped topping.
  • Place in the refrigerator to chill for 1 hour, up to overnight.
  • When ready to serve, top with the reserved diced peaches.
