Homemade Funfetti Cake
Ingredients
- 2 1/4 c 281g all-purpose flour
- 1 tbsp. 15ml McCormickยฎ vanilla extract
- 1 stick butter 113g softened
- 2 tbsp. 30ml vegetable oil
- 1 1/4 350ml cups milk
- 1 c 160g rainbow jimmies
- 1 tsp. 6g salt
- 3 1/2 tsp. 17g baking powder
- 1 1/2 c 300g granulated sugar
- 3 large eggs
Instructions
- Place softened butter into stand mixer and mix on medium for 1-2 minutes.
- Add milk, oil, vanilla and eggs and mix on low for one minute.
- Place dry ingredients into stand mixer and combine on low for 30 seconds.
- Remove from mixer and scrape down sides. Finish stirring by hand if not all combined.
- Pour batter into prepared pans. Bake at 350.
- For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes.
- Cool before frosting.

I actually do not strive for coordination when entertaining, when it comes to setting the table; I like mismatched napkins, bowls, plates, goblets, etc., if find it more interesting to look at. I do like coordination when trying to get the food on the table at the same time so everyone can eat at the same time at the table.

I use a couple color schemes that match and use dishes and tablecloths and coordinate the colors around what I pick. I will use clear dishes and glasses as to not have too much color that is overpowering!

I love to hunt through vintage and second hand shops to find unique one of a kind serving pieces, and at a great savings too!!
I tend to use themes ; Football. Farm Life. Animals, 40’s. Get it, it’s always been successful.
I have an old armoire filled with flea and yard sale finds. I go for a boho mixed look so it is easy for things to look coordinated.
I try to pick a theme or color scheme and build from there. And lots of lists. ๐
