Soft Rice Krispie Bars

Yes, I know there are plenty of Rice Krispie recipes out there. However, the difference in this recipe is that I used an entire can of sweetened condensed milk. Yes, I said an entire 14-ounce can! The end result is a super sweet treat that stays super soft & gooey! And, if you feel motivated, make your own homemade marshmallows to use. I also have Fluffernutter Rice Krispie Bars that have added peanut butter and marshmallow fluff which are incredible!

Bars Ingredients

Sweetened Condensed Milk: If a little is good, a lot must be great, right? Well, in this case, it is. Many recipes use just 1/2 cup of sweetened condensed milk, but trust me, you want to use the whole can! Be sure to check the labels carefully when buying sweetened condensed milk. Do not use evaporated milk in this recipe.

Butter: I used unsalted butter, but you can absolutely use salted if that is what you have on hand.

Do I Have to Use the Entire Can of Sweetened Condensed Milk?

You don’t have to use the whole can; you GET to! Using the entire can makes the treat extra sweet and ooey-gooey and keeps them soft a little bit longer.

Can I Make Rice Krispie Bars in a Different Sized Pan?

Yes! I wanted the bars to be nice and thick, so I used an 8×8-inch baking dish. You could use a 9×9-inch dish or even a 9×13-inch baking dish. However, the bars will be quite a bit thinner.

Can I Freeze Soft Rice Krispie Bars?

Yes! Let the bars cool completely. Then, cut them into individual bars and wrap each in plastic wrap. Finally, store the wrapped bars in a freezer-safe bag for up to 3-4 months. Be sure to label and date the packaging.

Soft Rice Krispie Bars

Soft Rice Krispie Bars are the sweetest and softest Rice Krispie bars you will ever make because of one special ingredient!

Ingredients

  • 3 tablespoons unsalted butter
  • 1 can (14 ounces) sweetened condensed milk
  • 1 bag (10 ounces) miniature marshmallows
  • 6 cups (174 g) rice cereal

Instructions

  • Spray an 8×8-inch baking dish with nonstick cooking spray. Set aside.
  • In a large pot over medium heat, melt butter. Add sweetened condensed milk and stir to combine. Bring the mixture to a simmer, stirring constantly to prevent burning.
  • Add marshmallows, stirring frequently until melted.
  • Remove the pot from heat and fold in the rice cereal with a clean rubber spatula (I like to spray the spatula with nonstick spray to prevent sticking). Stir until well coated.
  • Transfer mixture into the prepared baking dish and press into an even layer.
  • Allow the bars to cool to room temperature before cutting and serving.

  1. I made the recipe as shown even using the real Rice Krispies cereal. The bars came out really gooey and only tasted like condensed milk. I threw them out. I prefer the original recipe.

    1. Maybe just try using a portion of the sweetened condensed milk. I love Rice Crispy treats! I literally could eat an entire pan. ๐Ÿ˜† However, after eating them it seems like they can do a number on the roof of my mouth. I saw this recipe and thought maybe Iโ€™d try it, but I do love the taste of the original recipe. So thanks for your comment because now I know that for my first time making them, Iโ€™ll just try 1/2 the can of the sweetened condensed milk. I do think this recipe sounds delicious though.

  2. I’m sure these are delicious. But rice crispies
    and marshmallows have enough sugar. I personally don’t need the sweetened condensed milk.

  3. Your use of condensed milk sounds interesting and will have to give it a try. Our current favorite version toasts half the marshmallows in a sheet pan under the broiler until lightly to medium browned. The other difference is to brown the butter! Mix it all up and it’s delicious!!

  4. This sounds delicious! I read some comments that stated they were too soft or gooey for their liking, and another that said it altered the taste. I can appreciate that because the original recipe of Rice Krispie treats is heavenly. However, I could also appreciate a recipe where the snack is just a little softer and slightly gooey. My suggestion to anyone else like myself, try using only a portion of the sweetened condensed milk, as the creator mentioned when she said โ€œYou donโ€™t have to use the entire canโ€.

    I think this sounds amazing! My family really likes when I use the fruity version of the cereal (ie: Fruity Pebbles, or any brand of fruity rice cereal) to make these, but Iโ€™m considering an attempt at a peanut buttery recipe. I purchased an off brand PB & Cocoa cereal that doesn’t have the greatest flavor, but I bet with a few select added ingredients they will be happy to eat them.
    As well as using this cereal and just a portion of the sweetened condensed milk with the other ingredients, maybe Iโ€™ll add about a cup of PB to the mix. Itโ€™ll be like a little science experiment! ๐Ÿ˜† Canโ€™t wait to try.
    The kids are on a 2 hr delay today so it seems like the perfect time to try it.
