Homemade Funfetti Cake
Ingredients
- 2 1/4 c 281g all-purpose flour
- 1 tbsp. 15ml McCormickยฎ vanilla extract
- 1 stick butter 113g softened
- 2 tbsp. 30ml vegetable oil
- 1 1/4 350ml cups milk
- 1 c 160g rainbow jimmies
- 1 tsp. 6g salt
- 3 1/2 tsp. 17g baking powder
- 1 1/2 c 300g granulated sugar
- 3 large eggs
Instructions
- Place softened butter into stand mixer and mix on medium for 1-2 minutes.
- Add milk, oil, vanilla and eggs and mix on low for one minute.
- Place dry ingredients into stand mixer and combine on low for 30 seconds.
- Remove from mixer and scrape down sides. Finish stirring by hand if not all combined.
- Pour batter into prepared pans. Bake at 350.
- For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes.
- Cool before frosting.

I try to get matching colors then one surprise item!
Fresh flowers to reflect the season and occasion.
I coordinate my parties by making lists- and lots of them! My mom handles the main course and appetizers and I’m in charge of the cake!
I find one key centerpiece item and plan everything around that.
So lovely and inspiring! My children now insiste that THEY do the decorating. May not be perfect, but it’s perfectly fun! And the boys love the end result. Eating yummy cupcakes.
I try to coordinate the invitations to the decor as best I can.
To coordinate my parties, I first pick up some fabric that reflects the event or theme, then decorate from there. For example – a hot air balloon themed party – I found wonderful fabric at the quilt store with brightly colored hot air balloons that I used as a table cloth. From there, I used colors that played off the bright colors of the balloons. Using just one or two coordinating colors made the color theme cohesive and gave the party a color “pop”.
I wouldn’t say perfectly coordinated, but I do usually coordinate the food/drink around a theme, often lacking in decor though
Usually I don’t really coordinate parties. I think it is fun to just do whatever you want and everything comes together on its own.
