Homemade Funfetti Cake
Ingredients
- 2 1/4 c 281g all-purpose flour
- 1 tbsp. 15ml McCormickยฎ vanilla extract
- 1 stick butter 113g softened
- 2 tbsp. 30ml vegetable oil
- 1 1/4 350ml cups milk
- 1 c 160g rainbow jimmies
- 1 tsp. 6g salt
- 3 1/2 tsp. 17g baking powder
- 1 1/2 c 300g granulated sugar
- 3 large eggs
Instructions
- Place softened butter into stand mixer and mix on medium for 1-2 minutes.
- Add milk, oil, vanilla and eggs and mix on low for one minute.
- Place dry ingredients into stand mixer and combine on low for 30 seconds.
- Remove from mixer and scrape down sides. Finish stirring by hand if not all combined.
- Pour batter into prepared pans. Bake at 350.
- For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes.
- Cool before frosting.

When I host an event, I plan everything out ahead of time and there is usually some slight theme and I go along with the theme. I love baking (surprise, surprise!) and am usually thinking up what dessert to make before and thing else and I go from there! But to keep everything organized and make sure it gets done on time and done right, I have my wonderful fiance ๐
Girl, I get you. Doing the dishes is my least favorite thing to do by far!! Gah! It would be so nice to do the dishes knowing that one of these cakes were at the end though…yum! Also, Olivia’s dress? The cutest.
I have white as my base with blue solids and blue patterned pieces so that I can mix it up. I often make napkin rings and placecards to coordinate with centerpieces appropriate to the occasion.

I love choosing 3 colors as the color theme and making all the desserts have at least one of the colors, without making it too matchy. Clear plastic plates are my go-to serving trays, to spread the desserts across a big table.
I try to make them perfectly coordinated with a lot of planning, referring to Pinterest, friends suggestions and a lot of shopping! Its often challenging but I like to think I pull it off.
I always stick with a theme, I choose the colors/patterns I’m going to go with and coordinate from there.
