Homemade Funfetti Cake

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Do you have that one chore that you simply detest? For me, it’s washing the dishes. I would rather iron every single one of my husband’s shirts with military precision than do dishes.

Ingredients

  • 2 1/4 c 281g all-purpose flour
  • 1 tbsp. 15ml McCormick® vanilla extract
  • 1 stick butter 113g softened
  • 2 tbsp. 30ml vegetable oil
  • 1 1/4 350ml cups milk
  • 1 c 160g rainbow jimmies
  • 1 tsp. 6g salt
  • 3 1/2 tsp. 17g baking powder
  • 1 1/2 c 300g granulated sugar
  • 3 large eggs

Instructions

  • Place softened butter into stand mixer and mix on medium for 1-2 minutes.
  • Add milk, oil, vanilla and eggs and mix on low for one minute.
  • Place dry ingredients into stand mixer and combine on low for 30 seconds.
  • Remove from mixer and scrape down sides. Finish stirring by hand if not all combined.
  • Pour batter into prepared pans. Bake at 350.
  • For 9-inch pans its 20-25 minutes. For cupcakes start checking around 15 minutes.
  • Cool before frosting.

  1. I pick a theme first and splurge on a few accessories, but then head to the dollar store to buy all of the colored plates/napkins/silverware….

  2. I like using clear glass serving dishes and clear plastic. Iv’e picked up lots of servings dishes at flea markets and yard sales. I love the clear glass because you can add color with napkins, table cloths, flowers and whatever you want to use for decorations. It works great!

  3. I make my occasions perfectly coordinated by planning ahead and purchasing things that are color/theme related.

  4. I usually come up with a color scheme and go from there….chinet & I have been friends for a long time…big events like Mothers 90th bday to small events like burgers at home for dinner…2 grandchildren bdays coming up so gift card would be wonderful…the older I get (70) the more things cost and harder to continue traditions I have started over the years

  5. I love using white dishes & serving platters…..then I can add pops of color as needed to dress it up or down. Love the Chinet® Cut Crystal® & use it all the time. Never have an event without them!

  6. I like to use clear glass dishes also. That way whatever color you use will work. However, if I have anything to say about it I will go all out with PINK. My favorite color. I like it to be organized and match too. It doesn’t cost any more to make it match.

  7. For me, perfectly coordinating an occasion revolves around the guest of honor and what makes them so special. My family loves how their special day matches their interests perfectly. Your Rose cake is the most requested one that I bake & decorate!
