Ingredients & Substitutions

Brownies: It all starts with the perfect brownie base, and this is it! It is the same recipe as I used in my Snickers Brownies, which you will also want to try! You could also use a boxed brownie mix, baked according to the package instructions.

Cocoa Powder: For the richest brownies with a dark color, I opted for Dutch-processed cocoa powder. You could also use regular unsweetened cocoa powder, but it may alter the flavor of the brownies.

Ganache: Because I love chocolate, I used both semi-sweet and milk chocolate in the ganache. I also have milk chocolate ganache and chocolate ganache made with butter that would work on these brownies, too!

Can I Make The Brownies Ahead Of Time?

Sure! You can get a head start on this recipe by baking the brownies a day or two in advance. Once baked, they can be stored, and covered, for 1-2 days at room temperature. Then, add the ganache and sprinkles.

How to Store Rainbow Chip Brownies

Brownies should be stored in an air-tight container. They will last 1-2 days at room temperature. They may last a day or two longer if you store them in the refrigerator. In both cases, keep them in that air-tight container. If you want to freeze the brownies, do not cut them. Simply wrap the cooled brownies in plastic wrap. Then, wrap them up again in aluminum foil. Store them in the freezer for up to 3 months.

Ingredients

Brownies

  • 1 ½ cups (187.5 g) all-purpose flour
  • 1 tablespoon cornstarch
  • cup (39 g) Dutch-processed cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 large eggs, room temperature
  • 2 cups (400 g) granulated sugar
  • ¾ cup (1 ½ sticks / 170 g) unsalted butter, room temperature
  • 2 teaspoons vanilla extract

Ganache

  • 4 ounces semisweet chocolate, chopped
  • 4 ounces milk chocolate, chopped
  • ½ cup (119 g) heavy whipping cream
  • 1 tablespoon butter, cut into 4 pieces
  • ½ cup rainbow chip sprinkles

Instructions

Brownies

  • Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper, leaving some overhang for easy removal of the brownies.
  • In a large bowl whisk flour, cornstarch, cocoa, baking powder, and salt. Set aside.
  • To the bowl of a stand mixer fitted with the paddle attachment, add the eggs, sugar, butter, and vanilla. Beat on medium speed until light and fluffy.
  • With the mixer off, add the flour mixture. Turn the mixer on low and mix until the ingredients are well combined.
  • Pour brownie batter into the prepared baking dish and bake for 28-32 minutes, or until done. Fudgy brownies are done baking when the edges appear set, but the center is still shiny, or moist.
  • Let the brownies cool at room temperature before chilling in the refrigerator for 2 hours.

Ganache

  • To a microwave-safe bowl, add semi-sweet chocolate, milk chocolate, cream, and butter. Heat in 30-second intervals, stirring between each, until melted and smooth.
  • After the brownies have cooled, pour the chocolate ganache over the brownies.
  • Sprinkle the rainbow chips over the chocolate.
  • Refrigerate for about an hour, or until the chocolate is set.
