  5. Wow, Please let me know when you need taste testing. These all look great. I am thinking of spatchcocking our turkey again this year, do you think the bacon on top would work for this style. Thoughts on brining, Dry vs Wet and with turkey weights being so varied how do I know if it’s going to be too salty? Time vs salt content.
